approximately 2 servings
Ingredients
1 box of macaroni
2 tomatoes
½ bowl string beans
5 mushrooms
Condiments
½ tsp. sea salt
½ tsp. sugar
Some light soy sauce
Steps
1. Cook the macaroni in boiling water and drain. Wash tomatoes and dice. Remove the hard vein from the sides of the string beans and cut them into small pieces. Blanch string beans and immediately rinse under cold water. Let cool. Wash mushrooms and cut into big chunks.
2. Heat 1 tbsp of oil. Stir fry tomatoes with soy sauce. Add mushrooms, sea salt, and sugar. Gently stir and simmer for 5 minutes under low heat. Add macaroni and mix well. Before serving, top with string beans.
Tips
Other types of pasta can be used as well. Tomato soup can be made by using all the ingredients on Step 2 with ample water (cover all the materials), bringing the mixture to a boil, and then simmering under low heat. If noodles are added, it then becomes tomato noodle soup.
Information
The main nutrients in tomatoes are carotenes and vitamin C. Carotenes can prevent arterial diseases and prostate cancer. The route of absorption of tomatoes is different from that of other fruit and vegetables in that carotenes can only be released from the tomatoes after the tomato cells are destroyed through heat. Therefore, the quality of the carotenes in cooked tomatoes is far more superior then that of raw tomatoes.
