Baked Red Bean Cake2013-01-10

Ingredients:

Part A.1 package of sweet rice powder, 1 tsp of baking soda, 1 tsp of baking powder, and 2/3 cup of raisins
Part B. 3 cups of coconut milk, ½ cup of butter, ½ cup of sugar, and 1 tsp of vanilla extract
Part C. 1 cup of red beans, cooked
Part D. Walnut pieces and shredded coconut (optional)

 

Steps:

1. Put all ingredients from Part A into a metal bowl and mix well.
2. Mix sugar, butter, and vanilla extract. Add coconut milk.
3. Combine steps 1 and 2. Then add the ingredients from Part C.
4. Preheat oven to 350°F, and coat baking pan with oil. Pour the mixture of step 3 onto the pan and bake for 40 minutes. Sprinkle walnut pieces and shredded coconut on top and bake for another ten minutes. It is done when a toothpick stuck into the cake comes out clean.
