Zongzi (Sweet Rice Dumpling Wrapped in Leaves)2013-01-10

 

Ingredients:

1 package of Zongzi leaves (dried bamboo or reed leaves)
4 cups of sweet rice powder
½ cup of stir fried peanuts
1 cup of fermented vegetables
Some Gnaphalium affine (or Artemisia argyi)

 

Condiments:

2 tbsp of oil
4 tbsp of sugar
1 bowl of warm water
Some grated ginger


Steps:

1. Clean and dry the leaves.
2. Skin the peanuts and break them into small pieces
3. Saute ginger. Add fermented vegetables and stir fry for 5 minutes
4. Combine steps 2 and 3, and add 2 tbsp of sugar.
5. Boil the Gnaphalium affine for 10 minutes, and let cool. Drain excess water before cutting into tiny pieces.
6. In a container, add 1 ½ bowl of warm water, 2 tbsp of sugar,
Gnaphalium affine, and sweet rice powder. Mix well and then roll the
mixture into a ball. When the mixture does not stick to your hands, it is done.
7. Divide step 6 into 15 portions. Wrap each portion around a dollop of the mixture from step 4, and roll them into balls. Moisten with oil.
8. Wrap the stuffed balls from step 7 with the leaves, and tie them up with string.

 

Note:

1.When steaming the Zongzi, open the lid every 10 minutes so that the Zongzi
won’t crack open.
2. If the sweet rice balls are sticky, add more sweet rice powder and oil.
3. You can buy peanuts that have already been fried, or fry them yourself.
