Seaweed Salad 2013-02-06

 

Approximately 4~6 servings
 

Ingredients
300 g. raw shredded seaweed
2 small cucumbers, shredded
Some shredded carrots

 

Condiments
1 tbsp. light soy sauce
1/4 tbsp. sesame oil
1 tbsp. sugar
1 tbsp. lemon juice
2 tbsp. young ginger, shredded
1 tbsp. black vinegar

 

Steps

1. Wash and blanch seaweed. Mix all the condiments together to form a sauce. Set aside.

2. Pour the sauce over the seaweed and mix well right before serving.

 

Tip
Adding vinegar to the seaweed during blanching can soften it and eliminate odor.

 

Information
Seaweed is also known as kelp, one of the classic alkaline foods that contains an abundant amount of protein, iodine, calcium, phosphorus, iron, and vitamins B1, B2, C, and A. It helps in maintaining blood pH level, and is also beneficial to those with an enlarged thyroid gland; high blood pressure; or coronary heart disease.
